Moroccan Chickpea and Lentil Stew (Pressure Cooker Recipe)
Ingredients:
- 2 Tbsp. Harissa Olive Oil
- 1 large carrot, diced
- 1 large sweet potato, diced
- 1 stalk celery, diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 Tbsp. fresh ginger, grated
- 1 cup dried red lentils
- 1 can drained and rinsed chickpeas
- ½ cup dried currants, or chopped dried apricots
- 1 large can chopped tomatoes
- 2 cups veggie broth (or enough to cover all the ingredients)
- salt and pepper
Instructions:
- Place all ingredients in the inner pot of your Instant Pot/Quick cooker and select the chili/stew function. When it is finished release the steam manually and serve with an additional drizzle of Harissa Olive Oil on top.
