Moroccan Chickpea and Lentil Stew (Pressure Cooker Recipe)

Ingredients: 

  • 2 Tbsp. Harissa Olive Oil
  • 1 large carrot, diced
  • 1 large sweet potato, diced
  • 1 stalk celery, diced
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 Tbsp. fresh ginger, grated
  • 1 cup dried red lentils
  • 1 can drained and rinsed chickpeas
  • ½ cup dried currants, or chopped dried apricots
  • 1 large can chopped tomatoes
  • 2 cups veggie broth (or enough to cover all the ingredients)
  • salt and pepper

Instructions:

  1. Place all ingredients in the inner pot of your Instant Pot/Quick cooker and select the chili/stew function. When it is finished release the steam manually and serve with an additional drizzle of Harissa Olive Oil on top.
