Herbes de Provence Cauliflower Soup


  • 2 Tbsp. Herbes de Provence Olive Oil, plus more for drizzling
  • ½ onion, diced
  • 2 garlic cloves, crushed
  • 1-2 sprigs fresh thyme
  • 1 cauliflower, chopped into florets
  • 1 starchy potato, peeled and chopped small
  • salt and pepper
  • 5-6 cups vegetable broth
  • salt and pepper


  1. Heat the Herbes de Provence Olive Oil in a large soup pot.
  2. Add the onion, garlic and thyme sprig. Stir and cook for 2 minutes.
  3. Add the cauliflower and potato and stir. Add salt and pepper and cover with broth.
  4. Cover the soup with a lid and simmer for 15-20 minutes or until the cauliflower and potato are cooked through.
  5. Place soup in a blender and blend until smooth, or blend with a hand blender.
  6. Serve hot with an extra drizzle of Herbes de Provence Olive Oil.
