Vegetarian Honey Ginger Cabbage Salad

Ingredients:

  • 3-4 cups shredded cabbage
  • 2-3 shredded carrots
  • 3 green onions, sliced
  • 1 bell pepper, sliced thinly
  • 2-3 baby bock choy, sliced thinly
  • 1 Thai chili pepper, sliced very thinly (leave out if you don’t like spice!)
  • 2 Cups frozen edamame, thawed
  • ¼ cup Honey Ginger White Balsamic
  • 1/8 cup Garlic Olive Oil
  • 2 Tbsp. Dark Sesame Oil
  • 1 Tbsp. fresh ginger, grated
  • salt and pepper

Toppings:

  • Fresh cilantro, chopped
  • Chopped cashews

Instructions:

  1. Place all ingredients together in a bowl and toss together well. Top with cilantro and cashews.
