Vegetarian Honey Ginger Cabbage Salad
Ingredients:
- 3-4 cups shredded cabbage
- 2-3 shredded carrots
- 3 green onions, sliced
- 1 bell pepper, sliced thinly
- 2-3 baby bock choy, sliced thinly
- 1 Thai chili pepper, sliced very thinly (leave out if you don’t like spice!)
- 2 Cups frozen edamame, thawed
- ¼ cup Honey Ginger White Balsamic
- 1/8 cup Garlic Olive Oil
- 2 Tbsp. Dark Sesame Oil
- 1 Tbsp. fresh ginger, grated
- salt and pepper
Toppings:
- Fresh cilantro, chopped
- Chopped cashews
Instructions:
- Place all ingredients together in a bowl and toss together well. Top with cilantro and cashews.
