Tex Mex Pasta Salad
Ingredients:
- 1 lb small cut pasta, cooked (rotini, penne, macaroni)
- 1 bell pepper, diced
- ½ red onion, diced
- ½ cucumber, diced
- 2 cups cooked corn
- 1 can rinsed and drained black beans
- 1 tomato, diced
- 1 cup shredded cheddar cheese
- 1 bunch chopped fresh cilantro
- ¼ cup Chipotle Olive Oil
- fresh squeezed juice from one lime
- ¼ cup Espresso Dark Balsamic
- 1 tsp chili powder
- 1 tsp cumin powder
- salt and pepper
Instructions:
- Place the pasta, bell pepper, red onion, cucumber, corn, black beans, tomato, cheddar cheese, and cilantro in a large bowl.
- For the dressing, whisk together the Chipotle Olive Oil, Espresso Balsamic, Lime juice, chili powder, cumin and salt and pepper. Pour over the pasta mixture and mix until all combined.
