Tex Mex Pasta Salad


  • 1 lb small cut pasta, cooked (rotini, penne, macaroni)
  • 1 bell pepper, diced
  • ½ red onion, diced
  • ½ cucumber, diced
  • 2 cups cooked corn
  • 1 can rinsed and drained black beans
  • 1 tomato, diced
  • 1 cup shredded cheddar cheese
  • 1 bunch chopped fresh cilantro
  • ¼ cup Chipotle Olive Oil
  • fresh squeezed juice from one lime
  • ¼ cup Espresso Dark Balsamic
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • salt and pepper


  1. Place the pasta, bell pepper, red onion, cucumber, corn, black beans, tomato, cheddar cheese, and cilantro in a large bowl.
  2. For the dressing, whisk together the Chipotle Olive Oil, Espresso Balsamic, Lime juice, chili powder, cumin and salt and pepper. Pour over the pasta mixture and mix until all combined.
