Pink Grapefruit Green Salad with Radishes
Ingredients:
- A large bunch of mixed greens (arugula, mixed lettuce, micro greens, baby spinach, baby arugula, etc)
- ¼ Red onion, sliced thinly
- 3-4 radishes, halved and then sliced
- salt and pepper
- ¼ cup Pink Grapefruit Balsamic
- ¼ cup of your favourite light intensity Single Estate Olive Oil
- salt and pepper
Instructions:
- Toss the greens and the red onion in a large bowl.
- In a small bowl whisk the Pink Grapefruit White Balsamic with the Single Estate Olive Oil, salt and pepper.
- Drizzle the dressing on to the mixed greens, saving a little bit for an extra drizzle on top. Toss the greens and onion to coat.
- Arrange the radishes on top and then drizzle with the leftover dressing. Serve.
