Neapolitan Herb Cold Rice Salad


  • 2 Cups cooked rice
  • 2 Shredded carrots
  • 2 Sliced green onions
  • 2 Sliced Celery Stalk
  • A bunch of chopped flat leaf parsley
  • ¼ Cup Neopolitan Herb Dark Balsamic
  • ¼ Cup of your favourite Single Estate Olive Oil
  • Salt and pepper



  1. Place rice, shredded carrots, green onions, celery stalk and chopped leaf parsley. Mix well.
  2. In a small bowl whisk together Neapolitan Herb Dark Balsamic and Single Estate Olive Oil, salt and pepper.
  3. Pour dressing on salad, and toss together.
