Moroccan Quinoa Salad
Ingredients:
- 2 C. cooked quinoa
- 1/4 C. chopped dried apricot
- 1/4 C. raisins
- 1/2 C. grated carrots
- 1/2 C. chopped red onion
- 1/2 tsp. cumin
- 1/2 tsp. cinnamon
- 1/4 C. Harissa Olive Oil
- 1/4 C. Mango White Balsamic
Instructions:
- Combine all ingredients in a large bowl.
- Note: Substitute Lemon Olive Oil for a less spicy option & top with fresh mint
