Moroccan Quinoa Salad

Ingredients: 

  • 2 C. cooked quinoa 
  • 1/4 C. chopped dried apricot 
  • 1/4 C. raisins 
  • 1/2 C. grated carrots 
  • 1/2 C. chopped red onion 
  • 1/2 tsp. cumin
  • 1/2 tsp. cinnamon
  • 1/4 C. Harissa Olive Oil
  • 1/4 C. Mango White Balsamic

Instructions:

  • Combine all ingredients in a large bowl.
  • Note: Substitute Lemon Olive Oil for a less spicy option & top with fresh mint
* Keep in fridge for up to 5 days.
