Mediterranean Quinoa Jar Salad
Combine:
- 2 tbsp. Tuscan Herb Infused Olive Oil
- 1 tbsp. Sicilian Lemon White Balsamic Vinegar
- 1/2 cup flat leaf parsley - chopped
Layer in:
- 1/2 cup quinoa - cooked
- 1 cup grape tomatoes - halved
- 1 tbsp onion-diced
- 1/4 chickpeas
- 1/4 cup chopped red bell pepper
- 1/4 cup broccoli slaw
- 1/4 cup chopped artichoke hearts
- 1 bunch of lettuce
Top with:
- 2 tbsp feta - crumbled
- sprinkle of parsley
