Sweet Potato & Salmon Cakes
- 1 Baked sweet potato, mashed
- 1-2 Salmon Fillets (8 oz. total) flaked
- 2 Green onions, sliced
- ¼ cup Bread crumbs
- 1 Tbsp. Harissa Olive Oil
- 1 Tbsp. Pomegranate Dark Balsamic
- Salt and pepper
- ½ tsp Cinnamon
- ½ tsp Nutmeg
- ½ tsp Turmeric
- ½ tsp Cumin
- Place all ingredients in a large bowl and mix well.
- Make 12 patties of equal size and place in air fryer.
- Air fry for 12 minutes.
- Serve warm with your favourite side or cold over your favourite salad.
Note – you may shallow fry the patties in a little olive oil in a large frying pan if you prefer.
