Espresso and Blood Orange Roasted Squash
- 1 butternut squash, peeled, seeded and cubed
- salt and pepper
- 2-3 Tbsp Blood Orange Olive Oil
- 2-3 Tbsp Espresso Dark Balsamic
- Place squash in a large bowl and drizzle with the balsamic and olive oil. Add salt and pepper and toss well.
- Spread squash out on a baking sheet and roast in 400 degree F oven for 25-35 minutes, flipping half way through.
