Espresso and Blood Orange Roasted Squash

Ingredients:  

  • 1 butternut squash, peeled, seeded and cubed
  • salt and pepper
  • 2-3 Tbsp Blood Orange Olive Oil
  • 2-3 Tbsp Espresso Dark Balsamic

Instructions:  

  1. Place squash in a large bowl and drizzle with the balsamic and olive oil. Add salt and pepper and toss well.
  2. Spread squash out on a baking sheet and roast in 400 degree F oven for 25-35 minutes, flipping half way through.
