Lemony Veggie Casserole

Ingredients: 
  • 2 tbsp Milanese Gremolata Olive Oil
  • 2 tbsp Sicilian Lemon White Balsamic 
  • 1/2 chopped onion
  • 2 garlic cloves (minced)
  • 1 large zucchini 
  • 1 lb sliced mushrooms 
  • 1 cup chopped broccoli 
  • 1/2 cup shredded mozzarella
  • 1/4 cup Parmesan cheese
  • Salt & Pepper
  • Italian seasoning 
Instructions: 
  1. Sauté all veggies in the oil until softened 
  2. Add salt, pepper and Italian seasoning
  3. Transfer to a casserole dish and toss with Sicilian Lemon White Balsamic and top with cheeses. 
  4. Bake for 20 minutes at 350 degrees F.
