Chipotle Taco Bowl


  • 2 Tbsp Chipotle Olive Oil
  • 1 lb ground beef
  • ½ white onion, chopped
  • 1 Tbsp tomato paste
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper


  1. Heat Chipotle Olive Oil in a frying pan and add the ground beef. Cook meat until browned and cooked through. Add onions and cook another two-three minutes. Stir in tomato paste. Add spices and stir. Cook another two minutes.
  2. Use to top Chipotle Lime rice. (cook rice to desired texture, and while still hot add the juice of half a lime, a handful of fresh chopped cilantro and 1 Tbsp Chipotle Olive Oil and stir.
  3. Add toppings!: corn, salsa, black beans, sour cream, guacamole (add Chipotle Olive Oil to your guacamole for a kick!), chopped tomatoes, shredded cheese, red bell pepper, and red onions.

Optional: Add crumbled taco shells to top of bowl for crunch!

Note – this beef mixture can be added to tacos, quesadillas, and enchiladas!
