Chipotle Taco Bowl
- 2 Tbsp Chipotle Olive Oil
- 1 lb ground beef
- ½ white onion, chopped
- 1 Tbsp tomato paste
- 1 tsp chili powder
- 1 tsp ground cumin
- Salt and pepper
- Heat Chipotle Olive Oil in a frying pan and add the ground beef. Cook meat until browned and cooked through. Add onions and cook another two-three minutes. Stir in tomato paste. Add spices and stir. Cook another two minutes.
- Use to top Chipotle Lime rice. (cook rice to desired texture, and while still hot add the juice of half a lime, a handful of fresh chopped cilantro and 1 Tbsp Chipotle Olive Oil and stir.
- Add toppings!: corn, salsa, black beans, sour cream, guacamole (add Chipotle Olive Oil to your guacamole for a kick!), chopped tomatoes, shredded cheese, red bell pepper, and red onions.
Optional: Add crumbled taco shells to top of bowl for crunch!
Note – this beef mixture can be added to tacos, quesadillas, and enchiladas!
