Chipotle Lemon Summer Health Bowl
- 4 cups cooked Farro
- ¼ cup Chipotle Olive Oil plus extra for drizzling
- ¼ cup Sicilian Lemon White Balsamic
- 1 large avocado, cubed
- 2 cups cooked corn
- 2 cups grape tomatoes, halved
- 1 bell pepper, diced
- 1 cup crumbled Feta
- salt and pepper
- fresh cilantro, chopped
- In a bowl, mix the Farro with the Chipotle Olive Oil and Sicilian Lemon White Balsamic, salt and pepper.
- Split the Farro between four bowls so that each bowl has 1 cup. Top each bowl with ¼ avocado, ½ cup cooked corn, ½ cup grape tomatoes, ¼ bell pepper, ¼ cup crumbled feta. Add salt and pepper to taste and drizzle with extra Chipotle Olive Oil and top with cilantro.
