Chipotle Lemon Summer Health Bowl


  • 4 cups cooked Farro
  • ¼ cup Chipotle Olive Oil plus extra for drizzling
  • ¼ cup Sicilian Lemon White Balsamic
  • 1 large avocado, cubed
  • 2 cups cooked corn
  • 2 cups grape tomatoes, halved
  • 1 bell pepper, diced
  • 1 cup crumbled Feta
  • salt and pepper
  • fresh cilantro, chopped 


  1. In a bowl, mix the Farro with the Chipotle Olive Oil and Sicilian Lemon White Balsamic, salt and pepper.
  2. Split the Farro between four bowls so that each bowl has 1 cup. Top each bowl with ¼ avocado, ½ cup cooked corn, ½ cup grape tomatoes, ¼ bell pepper, ¼ cup crumbled feta. Add salt and pepper to taste and drizzle with extra Chipotle Olive Oil and top with cilantro.
