Harissa Green Curry

Ingredients:

  • 1 Tbsp. Harissa Olive Oil
  • 1 small chopped onion
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp cinnamon
  • 1 small head cauliflower, chopped into small florets
  • 1/2 cup vegetable broth
  • 1 Tbsp Green curry paste
  • 1/3 cup chopped spinach
  • 1/3 cup green peas

Instructions:

  1. Heat the Olive oil in large pot and add the onion. Cook gently until the onion is tender. Add spices. Add the cauliflower, veggie broth and green curry paste.
  2. Simmer until the cauliflower starts to soften, 3 to 5 minutes. Add the  chopped spinach, and green peas.

Note: You may add 1 cup white beans for more protein.

Serve on basmati rice with naan bread.

 Drizzle with additional Harissa Olive Oil.
