Harissa Green Curry
- 1 Tbsp. Harissa Olive Oil
- 1 small chopped onion
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp cinnamon
- 1 small head cauliflower, chopped into small florets
- 1/2 cup vegetable broth
- 1 Tbsp Green curry paste
- 1/3 cup chopped spinach
- 1/3 cup green peas
- Heat the Olive oil in large pot and add the onion. Cook gently until the onion is tender. Add spices. Add the cauliflower, veggie broth and green curry paste.
- Simmer until the cauliflower starts to soften, 3 to 5 minutes. Add the chopped spinach, and green peas.
Note: You may add 1 cup white beans for more protein.
Serve on basmati rice with naan bread.
Drizzle with additional Harissa Olive Oil.
