Glazed Maple Balsamic Chicken and Carrots
Ingredients:
- 1/2 C. maple balsamic
- 1 tbsp. whole grain mustard
- 2 tbsp garlic olive oil
- Salt & pepper
- 4 boneless chicken breasts
- 2 C. carrot chunks
- 2 tbsp. lemon olive oil
Instructions:
- Preheat oven to 375 F
- Whisk balsamic, mustard, garlic oil, salt & pepper
- Add chicken & marinade 30 minutes
- Toss carrots in lemon oil
- Arrange chicken (toss marinade) and carrots on baking sheet
- Bake for 25 minutes or until chicken is cooked through
