Vegetarian Chipotle Black Bean and Sweet Potato Stew

Ingredients: 

  • ¼ cup Chipotle Olive Oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 stalk of celery, chopped
  • 1 sweet potato, chopped
  • 1 garlic clove, crushed
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 Tbsp tomato paste
  • salt and pepper
  • 1 cup frozen or fresh corn kernels
  • 1 can black beans, rinsed
  • 6 cups vegetable broth

 

Instructions:

  1. In a large sauce pan, heat the Chipotle Olive Oil and add the onion, carrot, celery and sweet potato. Cook for 5 minutes.
  2. Add garlic and stir.
  3. Add chili powder, cumin, and tomato paste. Stir well.
  4. Add salt and pepper, corn, black beans, and vegetable broth.
  5. Simmer, covered, for 20 minutes, then an additional 10 minutes, uncovered.
