
Vegetarian Chipotle Black Bean and Sweet Potato Stew
Ingredients:
- ¼ cup Chipotle Olive Oil
- 1 onion, chopped
- 1 carrot, chopped
- 1 stalk of celery, chopped
- 1 sweet potato, chopped
- 1 garlic clove, crushed
- 1 tsp chili powder
- 1 tsp cumin
- 2 Tbsp tomato paste
- salt and pepper
- 1 cup frozen or fresh corn kernels
- 1 can black beans, rinsed
- 6 cups vegetable broth
Instructions:
- In a large sauce pan, heat the Chipotle Olive Oil and add the onion, carrot, celery and sweet potato. Cook for 5 minutes.
- Add garlic and stir.
- Add chili powder, cumin, and tomato paste. Stir well.
- Add salt and pepper, corn, black beans, and vegetable broth.
- Simmer, covered, for 20 minutes, then an additional 10 minutes, uncovered.
